chicken broiled over charcoal fire
Ingredients sufficient for 2 three-pound chickens :
Same quantities as for the M’Hammer chicken.
Cook the chickens in the same way as the recipe for M’Hammer chicken prepared the traditional way but without
the onion and coriander. Once the chickens are cooked, leave to cool and spread with the following mixture:
* 1 soupspoon ful of paprika * 1 level teaspoonful of cumin
* 1 good pinch of ground chilli * 50 g (2 oz) of melted butter * salt
When almost ready to eat, grill over charcoal embers but be careful to place a grille on the barbecue. Serve as soon as the chickens are well grilled.
