Cockerel Stuffed with Semolina

Ingredients:

* 2 cockerels
* 3 crushed garlic cloves
* 1 big onion
* 1/4 glass oil
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* 1/2 teaspoon ginger
* some saffron
* 1 and 1/2 big glass water

Filling:
 
* 1 bowl cooked and prepared semolina
* 2 tablespoons raisins
* 3 tablespoons poached, peeled and crushed almonds
* 1/2 tablespoon cinnamon
* 1 tablespoon butter
* 1 pinch gum Arabic powder
* 1 tablespoon castor sugar

Decoration: some poached and blanched almonds

Preparation:

Filling In bowl, put semolina, raisins, crushed almonds, cinnamon, butter, gum Arabic powder and sugar. Mix well all ingredients.
Wash cockerels with salted water, strain and stuff with semolina mixture. Weld openings with tooth-picks which you'll take off after cooking.
 
In a saucepan, place cockerels with chopped onion, oil, garlic, salt, pepper, ginger and saffron and seal over moderate heat.
Add poached and blanched almonds and 1 and lh glass water. Cover and cook for 20min. Add water if necessary, Serve cockerels hot with sauce.
