Farmer Chicken
Ingredients:
* 1 farmer chicken of 1.5kg
* 1/4 glass oil
* salt
* 2 chopped onions
* 4 chopped garlic cloves
* 1/4 teaspoon ginger
* 1/4 teaspoon pepper
* 1/4 teaspoon saffron
* a few if saffron pistils
* water
Filling:
* 1 packet Chinese vermicelli (100g)
* 100 g diced chicken livers
* 2 crushed garlic cloves
* 2 tablespoons parsley and coriander chopped
* salt and pepper
* 2 tablespoons oil
Decoration:
* 100g red olives
* preserved lemon
Preparation:
Filling Soften Chinese vermicelli in a bowl of hot water for a few minutes. Strain and cut, Add dices of chicken livers (giblets), crushed garlic, parsley, coriander, salt, pepper and 2 tablespoons oil, Mix well, Wash chicken with salted water after preparing it. Stuff with vermicelli mixture then mend opening with a food thread.
Place chicken into a pressure cooker with oil, salt, chopped onion and garlic. Brown over modera te heat, stirring from time to time until golden elements, Add remaining spices, stir and pour 1.5litres water. Cover and cook for about 1h, Ten minutes before cooking, add red olives, Serve hot with sauce and decorate with strips of preserved lemon.
