grilled veal heart
Ingredients for a veal heart weighing about 1 kg (2 ibs 3 oz) :
* 1 Soupspoonful of paprika * 1 heaped teaspoonful of cumin
* 1 good pinch of ground chili * salt
Preparation:
Mix the spices. Cut the heart into 2 cm (1”) cubes, rinse and drain. Season with the mixed spices. Put 6 or 7 pieces on each skewer and grill over charcoal. Serve at once with mint tea.
