Ingredients for about 10 skewers :
* 1 kg (2 lbs 3 oz) of fillet steak * or leg of mutton * 1 big bunch of parsley chopped very fine
* 2 white kidneys * 1 small finely chopped onion * 2 kidneys in their fat * salt
Preparation:
Mix the salt and chopped parsley by rubbing them with the palm of the hand on the table, Cut the meat, the kidneys and the kidney fat into 2 cm (1’) cubes. Take the skin off the white kidneys. Grill lightly on a spit over charcoal. Mix with the salt and parsley and the chopped onion. Put about 10 cubes on each skewer, with 2 cubes of meat to for one of fat. Broil over the charcoal embers and serve at once.
