kdra chicken chick peas and onions o almond
Ingredients for 2 chickens weighing about 3 ibs each and cleaning a chicken :
* 1 glassful of chick-peas soaked overnight and peeled the next day
* 1 1/2 kg (3 lbs 5 oz) of onions * 1 handful of chopped parsley * 200 g (7oz) of butter
* 1 coffeespoonful of saffron (mixed packet saffron and crushed saffron flowers)
* 1 heaped teaspoonful of pepper * salt.
Preparation:
Cut the chicken in pieces and put them in a thick-bottomed saucepan with the offal. Add salt, pepper, saffron, butter, 2 sliced onions, and the peeled chick-peas. Cover with 2 big glassfuls of water, Cover with a lid and cook over a moderate heat, turning over from time to time. Add water if necessaryWhen the chickens are cooked, i.e. their flesh comes off the bones easily in the fingers,
taken them out of the sauce to which should be added the remainder of the sliced onions, the chopped parsley, a little salt and a pinch of saffron. Shake the saucepan to mix well, When the onions are cooked but still firm, check the seasoning and take the saucepan off the heat. Put the chickens back into the sauce with the Onions for a moment to re-heat, then arrange them on a dish with the onions and chick-peas on top and serve at once.
kdra chicken with almonds and onions:
Same quantities as for recipe for chickens with chik-peas and onions given above. Replace the chick-peas with 200 g (7 oz)
of peeled almonds which shou’d be cooked with the chickens.
