kefta meat-balls with tomatoes

Ingredients for 8 people :

* 3kg (6 lbs 10 oz) of tomatoes * 1 teaspoonful of pepper

* 1 good pinch of saffron (preferably crushed saffron flower) * 1 grated onion

* 150 g (5 oz)of butter crushed chili to taste * 1 handful of chopped parsley

Preparation:

Wash, skin and seed the tomatoes. Cut in pieces but do not pass through a vegetable sieve. Put in a thick-bottomed saucepan, adding salt, pepper, saffron, grated onion, butter and chilli. Leave to boil down, stirring from time to time until the liquid has completely evaporated and fairly thick tomato purée is produced.

While the tomatoes are boiling down, make meat-balls the size of a child’s marbles with the kefta and toss them into the tomato sauce when it begins to thicken, Add the chopped parsley. Bring to the boil and mix. Remove from the heat as soon as the meat-balls are cooked and the tomato sauce is thick. Re-heat, stirring all the time, before serving.
