kefta m'chermal meat balls
Ingredients for 8 people :
* 500 g (1 lb 2 oz) of kefta (see chapter on grills) * 4 chopped onions * 1/2 teaspoonful of ginger
* 1/2 teaspoonful of paprika crushed chilli to taste * 100 gr (4 oz)of buffer * 2 glsses of water
* 1 good pinch of saffron (preferably crushed saffron flower) * enough cumin to cover the tip of a knife
* 2 soupspoon fuls of chopped parsley and coriander * 1/2 teaglassful of lemon juice.
Preparation:
Put the finely chopped onions in a saucepan, adding the ginger, saffron, cumin, paprika, crushed chilli and butter. Add salt and cover with 2 glasses of water. When the onions are cooked, tip 1 lb of marble-sized kefta meat-balls into the saucepan, add the very finely chopped parsley and coriander and the lemon juice. Leave to boil down for a few minutes and remove from the heat. Serve very hot.
