Another recipe for gritted liver Ingredients for about 12 skewers :

* 1 sheep’s flyer * 500 g (1 lb 2 oz) of mutton fat * 1 teaspoonful of cumin

* 2 teaspoonfuls of paprika * 1 pinch of Sudan feltla (ground hot pepper) * salt

Preparation: 

Take the outer membrane off the liver, wash and grill lightly. Cut into 2 cm (1”) cubes. Cut the fat up in the same way after rinsing. Mix the spices with salt and sprinkle the liver and the fat with this mixture. Mix well. Put 6 or 7 cubes on each skewer, alternating liver and fat, Grill over charcoal and serve at once with mint tea.
