Lamb Spleen Stuffed

Ingredients:
 
* 4 lamb spleens 
 
Filling:
 
* 350g minced meat
* 5 tablespoons chopped coriander
* 1 preserved lemon diced
* 100g olives diced
* salt and pepper
* Cayenne paprika
* 1 teaspoon cumin
* 5 chopped garlic cloves
* 2 onions chopped and sweat
 
Sauce:
 
* 1 big glass water
* 1 onion

Preparation:

Filling In bowl mix minced meat, coriander, diced preserved lemon, diced olives, salt, pepper, Cayenne paprika, cumin, garlic and sweat onion, Transfer filling into a piping bag and with a knife incise spleens and stuff them, once spleens stuffed, mend them or seal with toothpicks to avoid filling to spill out.
 
Prick spleens with a fork, Put them in saucepan over moderate heat with chopped onion and big glass water, Simmer until well done, for 15 to 20min.
