medfi kababs in butter and sauce
Ingredients for 8 people :
* 1 kg (2 lbs 3 oz) of kababs
Prepare the kabab as described in the chapter on grills, skewer them and put on one side.
* Put 150 g (5 oz) of butter and a glassful of water in a saucepan
to cook over a low heat. Add the bits of parsley and chopped onions (chermoula) that fall of the pieces of meat as they are put on skewers. Add a little salt. The kababs are grilled over charcoal embers and the meat should be taken off the skewers as soon as it is done and added to the ingredients in the saucepan Add 4 soupspoonfuls of vinegar and leave the sauce to reduce until it is creamy. Remove from the heat and serve at once.
