mrouzia style hare (sweet dish)

Ingredients for a good-sized hare :

* 150 g (5 oz) of raisins * 150 g (5 oz) of almonds

* 1 heaped soupspoon ful of Ras El Hanout * 1 leveal teaspoonful of pepper

* 1 coffeespoonful of saffron (mixed packet saffron and crushed flowers) * 2 grated onions

* 150 g (5 oz) of butter * 1 teaspoonful of cinnamon * 4 soupspoon fuls of thick honey

Preparation: 

Wash the hare in salt and water after having cleaned it and cut it up. Leave to drain. Mix the spices-the Ras El Hanout, pepper, saffron and cinnamon and coat the hare all over with the mixture, Wash the raisins, drain, mix with the remainder of the spices and put on one side. Put the hare in a thick-bottomed saucepan with salt, butter, peeled almonds and 2 grated onions.

Cover with water. Cook with the lid, on, turning the pieces over from time to time, When the hare is cooked and quite tender, take out of the saucepan. Add the raisins and the honey to the sauce and boil down until it is thick and syrupuy. Put the hare back into the sauce and leave for a good 5 minutes to simmer so that it becomes well impregnated with the sauce, then remove from the heat. Serve very hot.
