Mutton mhammer chouakder

Ingredients for 8 to 10 people :

Choose half a side of mutton ( shoulder and chops ) weighing 3 to 3 1/2 kg (6 lbs 10 oz to 8 ibs). Rinse and put in thick-bottomed saucepan with the fleshy part downwards. Add salt and the following:

* 1 teaspoonful of pepper * 1/2 teaspoonful of saffron (preferably crushed flowers)

* 1/2 teaspoonful of ginger * 1 bunch of coriander tied together

* 2 chopped onions * 150 g (5 oz) of butter * 2 glassfuls of water

Preparation: 

Cook with the lid on over a moderate heat, basting with th€ juice from time to time. After 2 to 2 112 hours cooking, see if the flesh will break off easily in the fingers, take out the bunch of coriander and boil down the sauce until it is thick, and remove from the heat.

(This recipe can, if necessary, be done without coriander.)15 minutes before serving, fry the meat golden brown with butter in a frying pan. Arrange on a hot dish, add 2 soupspoonfuls of the butter used for frying to the sauce when re-heating, stirring vigorously the saucepan with a circular movement, and pour over the meat. Serve at once.
