Maakouda (egg and potato fritters)

Ingredients:

* 4 diced potatoes
* 1 tablespoon cumin
* 2 eggs
* 1/4 teaspoon curcuma
* 2 tablespoons parsley and coriander chopped
* salt and pepper
* flour
* 3 garlic cloves

Preparation:

Wash and poach potatoes in salted water then mash either with a fork or a mashing tool, Place potato puree in a salad bowl; add 1 egg, parsley, coriander, crushed garlic, cumin, curcuma, salt and peppero Mix well.
 
Make balls out of potato puree and flatten lightly with your fingers, dip one at a time in 1 beaten egg then into flourTake care of rubbing excess of flour out of maakoudas, fry maakoudas in hot oil and brown both sides.
