semolina pudding with milk
Ingredients for 8 to 10 people; Cooking time 30 to 45 minutes :
* 2 litres (4 pts) of hot water
* 1 heaped soup bowl of coarse semolina
* 2 litres (4 pts) of milk
* 1 good teaspoonful of salt
* 1 knob of butter the size ota walnut
* 8 soupspoonfuls of caster sugar
* 1/2 teaglassful of orange-flower water
Preparation:
Put the semolina into hot (not boiling) water. Add salt and stir. Cook on a low heat, stirring often, for about half an hour.
Then add the milk, sugar, orange-flower water and butter.Leave to boil for 15 to 20 minutes and remove from the heat.
