semolina cooked water

Ingredients :

* 500 g (1 lb 2 oz) of coarse semolina

* 30 g (1 oz) of butter to cook with the semolina

* 50 to 100 g (2 to 4 oz) of butter (to add afterwards)

* 3 litres (5 pts) of water

* salt

* honey to taste

Preparation:

Put the semolina in hot (but not boiling) water, stir and bring to the boil over a moderate heat. Add the butter and a little salt. Cook for half an hour after it comes to the boil, stirring constantly.

When cooked the lââssida should be quite thick. Pour at once into a deep dish while still boiling hot. Top with little knobs of butter and a few spoonfuls of honey. Serve immediately. Also serve a pot of honey separately from which people can help themselves, Lââssida is a dish generally served for breakfast on the feast of Aid El Mouloud.
