The milk is curdled with artichoke beard which is dried and kept in a well-covered preserving jar.

Ingredients for 1 litre (2 pts) of milk :

* 1 soupspoonful of wild artichoke beard * 2 soupspoonfuls of orange-flower water

* 4 to 5 soupspoonfuls of caster sugar, to taste

Preparation: 

Put a soupspoonful of crushed artichoke beard in a bowl and cover with tepid water. Warm the milk, after flavouring with the orangeflower water and adding sugar. Press the artichoke beard through a fine muslin and quickly mix the juice with the warm milk. Pour the milk into bowls at once, cover and leave to curdle in a fairly warm place for about 1 to 1 1/2 hours. Then put in a cold place until ready to serve at the end of a meal.
