Almond Briwats

Ingredients:

* 250g poached and peeled almonds
* 100g castor sugar
* 50g butter
* 1/2 teaspoon cinnamon
* 1 pinch gum Arabic powder
* 1 tablespoon orange-flower water
* 24 sheets pastilla flaky pastry
* 1 egg yolk
* oil to fry
* 500g honey

Decoration:

* 50g fired and crushed almonds

Preparation:

Blanch almonds, peel and drain with a clean cloth, then mix with sugar. Add 1 tsp butter, cinnamon, gum Arabic powder and orange-flower water, Knead well, and then form rolls.
