Almond Ghribas
Ingredients:
* 500g almonds
* 1 pinch gum Arabic powder
* 1 teaspoon baking powder
* 1 teaspoon butter
* 4 eggs
* 250g icing sugar
* 2 tablespoons lemon zest
Decoration:
* egg white
* icing sugar
Preparation:
Blanch almonds, peel and then mix them. Add gum Arabic powder, baking powder, butter, 3 egg yolks (keep egg whites), 1 egg, sugar and lemon zest, Combine all ingredients thoroughly until smooth.
Grease your hands, shape pastry into little ghriba balls, Dip them into egg whites then dust icing sugar, Place the ghribas onto a greased and floured tray, bake into a moderate oven for about 20 to 25 min, serve cool.
