Almond Petits Fours

Ingredients:

* 500 gr almonds * 1 pinch gum arabic powder * 1 teaspoon baking powder * 1/2 tablespoon butter * 4 eggs * 250 gr icing sugar * 2 tablespoons grated lemon zest

Decoration:

* 100 gr poached and peeled almonds

Preparation:

Poach almonds for 10 minutes, peel them an then mix in a food processor until smooth paste. Add gum Arabic powder, baking powder, butter, 3 eggs yolks, 1 egg, icing sugar and grated lemon zest. Combine all ingredients to give body to the paste.
 
Fill in a star piping bag with mixture and onto greased tray, press to form little puffs. Decorate with almonds and bake in preheated oven at 18O° C for about 20min.
