Almond Rings

Ingredients: Cooking:15min Temperature: 180°C

Pastry:

* 200g double cream
* 1 tablespoon castor sugar
* 1 pinch salt
* 250g flour

Filling:

* 500g almonds
* 350g castor sugar
* 1/4 teaspoon cinnamon
* 3 teaspoons butter
* 1 pinch gum Arabic powder
* 4 tablespoons orange-flower water

Decoration:

* egg white
* 50g almonds (poached, peeled, crushed)

Preparation:

Filling : blanch almonds for 10 min. Peel, drain, and then mix with sugar until smooth, Combine the paste, cinnamon, butter, gum Arabic powder and orange-flower water, Shape into long rolls.
 
Pastry : combine in bowl double cream, sugar and salt. gradually add flour and then cool for 30 min, Roll out pastry thinly, place almond rolls and then roll tightly in the pastry. Cut the rest of the pastry.
 
use the remaining almond paste as above, cut rolls into pieces of 8 cm. With your index finger, flatten lightly each piece, and then seal both ends to form a ring.
 
Dip top of biscuits in egg white then in crushed almonds, Place rings onto a greased tray and bake in moderate oven at l80°c for 15 min.
