Almond Rods

Cooking:15min Temperature: 180°C

Ingredients:

Pastry:
 
* 200 gr double cream * 1 tablespoon castor sugar * 1 pinch salt * 250 gr flour

Filling:
 
* 500 gr poached and blanched almonds * 300 gr castor sugar * 1/4 teaspoon cinnamon * 3 teaspoons butter * 1 pinch gum Arabic powder * 4 tablespoons orange-flower water

Decoration:
 
* 1 egg white * 6 tablespoons sesame seeds

Preparation:

Filling: process twice almonds and sugar to obtain almond paste. Add cinnamon, butter, gum Arabic powder and orange-flower water. Mix weil and then form long rods of 1 cm thickness.
 
Pastry: in bowl, combine double cream, sugar and salt. Mix well while adding graduall y flour until smooth dough. Refrigerate 30 min
Take pastry out of the fridge and roll it over (thinly) with a pastry roller, then place one at a time almond rods.
 
Cover rods with pastry, then cut and remove from the rest of pastry. Cut into little cigars. Dip both ends of cigars in egg white, then in sesame seeds. Place them onto a greased tray and bake 15 min in moderate and preheated oven.
