Almond snake (M'hancha)
Ingredients:
* 250g almonds
* 125g castor sugar
* 3 tablespoons melted butter
* 1/4 teaspoon cinnamon
* 2 tablespoons orange-flower water
* 1 pinch gum Arabic powder
* 20 sheets pastille flaky pastry + melted butter
Decoration:
* 1 egg yolk
* 3 tablespoons chopped and crushed almonds
* 2 tablespoons honey
Preparation:
Poach almonds for 5 minutes, peel and drain with a clean cloth, Mix with sugar in a food processor to obtain smooth almonds paste.
Add 3 tablespoons melted butter, orange-flower water, and cinnamon and gum Arabic powder, Knead well and form rolls.
Cut pastilla sheets into rectangular shapes and brush with melted butter, Place a roll of almond paste on the pastry sheet, and then roll it up tightly in the pastry, Brush the surface with egg yolk and garnish with chopped almonds.
Place rolls on greased oven tray and bake in preheated oven 15 min until pastry is crisp and golden, Once cooked, sprinkle with warm honey, then cut into small pieces, Serve cold.
