Almond Triangles

Ingredients:
 
Pastry: * 500 gr butter * 400 gr castor sugar * 700 gr flour * 200 gr Maizena * 1 teaspoon baking powder * 1 teaspoon almond essence
 
Decoration : * 1 small jam jar * icing sugar
 
Filling: * 500 gr poached almonds * 250 gr castor sugar * 2 tablespoons butter * 1 teaspoon cinnamon * 1/2 teaspoon almond essence * 1 tablespoon orange-flower water
 
Preparation:
 
Pastry: Combine butter, sugar, flour, Maizena, baking powder and almond essence until smooth dough. Roll it over with a pastry roller.
Almond filling: Mix almonds with sugar, then add butter, cinnamon, almond essence and orange-flower water. Shape into little balls.
 
Cut into circles. Fill the inside of each one of them with half a teaspoon jam. Place almond balls on jam. With your fingers, fold circles in triangle shapes, then put them onto a tray lined with greaseproof paper and bake in moderate and preheated oven, before serving sprinkle over icing sugar.
