Almond Zelliges

Ingredients:

* 600 gr black chocolate * 250 gr poached almonds * 100 gr icing sugar * 60 gr butter * 1 pinch gum Arabic powder

Decoration:
 
* 100 gr white chocolate

Preparation:

Chocolate au bain marie : in bowl, break 300g of black chocolate into pieces and put it onto a pan of hot water, stir until it melts.
Pour melted chocolate onto a tray (or other large container) lined with greaseproof paper and equalise surface with a wooden spoon.
 
Mix almonds with sugar, butter and gum Arabic powder. On a working surface, roll out almond paste with a pastry roller and put it on top of chocolate as a second layer.
 
Melt the remaining black chocolate in a bain-marie then pour it on almond paste. Spread well to cover all boards of tray and equalise with a wooden spoon. Garnish with melted white chocolate, let cake cool then cut it into lozenges.
 
if you wish to have white zelliges, use 600g of white chocolate and 100 gr of black chocolate. But it's preferable to use black chocolate for its virtues and nutritive value.
