Throw a few grains of gum-acacia on the glowing embers of a barbecue.

When it begins to smoke, put an earthenware jar upside down over the barbecue.

Leave it to become impregnated with the perfume of the gum-acacia for a few minutes.

Then put water lightly flavoured with orange-flower water in the jar. Cover and allow to get cold before drinking.
