Gazelle's horns pastry
Cooking :25min Temperature: 180°C
Ingredients:
Filling
* 1 kg almonds
* 500g castor sugar
* 1/2 teaspoon cinnamon
* 1 pinch gum Arabic powder
* 1/2 glass melted butter
* 5 tablespoons orange-flower water
Pastry
* 500g flour
* 1 egg
* 1/2 glass melted butter
* 1 pinch salt
* 2 tablespoons orange-flowerwater
* 1 glass water
Preparation:
Pastry : pour flour in bowl then add egg, butter, salt, orange-flower water, water, knead thoroughly until smooth dough. Divide it into balls then preserve.
Filling : blanch almonds and peel them. Mix with sugar, cinnamon, gum Arabic powder, butter and orange-flower water. Shape into little rods to fill.
With a pastry roller, roll out thinly the pastry balls into rectangles then grease lightly. Put almond rods onto pastry then roll over one at a time.
With your fingers pinch rods on top shaping it into a crescent then cut with a pastry wheel cutter, Place horns onto a greased tray, prick with a needle before baking, Gazelle horns should take a golden colour.
