ghoriba dial jeijlane (sesame seeds)

ingredients for approximately 40 cakes :

- 250 g (9 oz) of sesame seeds (grilled)

- 100 g (4 oz) of fine flour (grilled)

- 200 g (7 oz) of caster sugar

- 3 whole eggs

- 1 sachet (2 tsp) of baking powder

- the zest of I grated lemon

Wash, drain and grill the sesame seeds on top of the stove, stirring them all the time until they are golden brown all over. Toast the flour in the same way and sieve through a silk sieve.

Then put the sesame seeds through the mincer and mix together on the table with the caster sugar, baking powder and lemon zest. Make a hollow in the flour mixture and break 3 eggs in it and knead thoroughly until a very slack dough,

hardly suitable for handling is produced. Smear the hands with oil and shape balls of dough the size of walnuts flattening them slightly by pressing them on a little icing sugar.

Place on an oiled baking sheet progressively, sugar side up, and cook in a moderate oven for about 15 minutes.
