ghoriba shortcake made with butter

Ingredients for 60 to 70 biscuits :

* 500 g (1/b 2 oz) of fine flour * 250 g (9 oz) of hard-wheat flour sieved through a silk sieve

* 250 g (9 oz) of icing sugar * 450 g (1 Ib) of softened butter

Preparation: 

Carefully mix the softened butter, icing sugar and sieved flour. Form into a large ball of dough and leave to stand for a few hours.Put this mixture through the mincer twice, then knead for a few minutes.

Take a piece of dough the size of a walnut, form a ball and flatten slightly by passing it from the palm of one hand to the other. Prepare all the dough this way. Arrange on an ungreased baking sheet and cook in a moderate oven for 15 to 20 minutes.
