Honeyed Pastry Ribbons (Chebbakia)

Ingredients:

* 500 gr plain flour * 125 gr wholemeal flour * 1/4 tablespoon salt * 125 gr golden and ground sesame seeds
* 1/4 glass melted butter * 2/3 glass oil * 1/2 tablespoon aniseed * 1/2 tablespoon ground cinnamon
* 1 pinch gum Arabic powder * 1/2 glass orange-flower water * 1/2 teaspoon baking powder
* 1/2 teaspoon saffron pistils (heatedandground) * 1 egg yolk * 1 egg shell vinegar
* 1 big glass water * oil to fry * 1kg honey

Decoration : 

* 1 glass golden sesame seeds

Preparation:

Put flour in a large shallow bowl, make a well in the centre and add salt, ground sesame seeds, melted butter, oil, aniseed, cinnamon, gum Arabic powder, orange-flower water, baking powder, saffron, egg yolk and vinegar. Mix well and add warm water. Knead energetically to obtain homogenous and malleable dough. (Add water if necessary).
 
Divide dough into medium balls and roll out on floured working surface with a pastry roller. With a cutting wheel cut into squares of 8cm each. Then cut into 4 equal strips without touching edges. To weave squares, lift with the index finger strip s 1-3-5.
With both hands, separate strips 1-3-5 and strops 2 - 4 without untying the square.
 
Seal both inferior ends and raise sealed part to form chebbakia. Continue the whole dough as shown. Dip chebbakias in hot oil and brown them on both sides. Then dip them into honey and turn around with wooden spoon. Strain and decorate with sesame seeds. Serve cold.
