Macaroons
Ingredients:
* 600g almonds
* 300g icing sugar
* 3 eggs
* 1 teaspoon baking powder
Decoration:
* some almonds
Preparation:
Whisk 3 egg whites to a stiff snow, Reserve egg yolks for pastry, Wash and drain the almonds, then mix. Add icing sugar, 3 egg yolks and baking powder, Mix well. Pour white eggs in snow, stirring delicately, with a spatula, from bottom to top until smooth paste.
Roll into little balls, place on a greased oven tray, or lined with greaseproof paper, Garnish with almonds and bake in preheated oven at 180° c, Out of the oven, macaroons are soft but harden after a few hours, Keeping them in a refrigerated place, they become malleable.
