Ingredients:

Pastry:
 
* 125 gr thick semolina * 125g thin semolina * 1 tablespoon castor sugar * 1/4 teaspoon salt * 100 gr melted butter * 1 glass cold water * 1 glass orange-flower water

Filling:
 
* 200 gr dates or 125 gr dates paste * 1/2 teaspoon cinnamon * 1 tablespoon butter * 1 tablespoon orange-flower water * oil to fry * 250 gr honey
 
Preparation:
 
In bowl, combine semolinas, sugar and salt, Add melted butter and continue mixing. Pour into this mixture a cup of water, a cup of orange flower water while kneading with your fingers.
 
Dates paste : deseed dates and steam for 20min. Let it cool then knead the paste with your hands adding cinnamon, butter and orange-flower water. Shape into long rods of 1cm thickness. Form other rods with semolina paste. Make a crack in the middle of each rod and put inside it a date paste rod before sealing.

Cut rods into little equal lozenges (makrouts) and preserve. Fry these makrouts in hot oil. Once golden, strain then dip immediately into hot honey flavoured with orange-flower water. starin and serve cold.
