M'smmens (flaky Pancakces)

Ingredients:

* 2 big bowls wheat flour * 1 big bowl plain flour * 1 teaspoon salt * 1/2 glass oil
* 1/2 glass melted butter * 1/2 litre warm water

Preparation:

Combine both flours and add salt and water. Knead energetically until homogenous dough. (Add water if necessary).
Divide dough into big balls and brush with oil mixed to melted butter. Spread balls one at a time with tip of your fingers forming circles. Fold one side, brush with mixed oil and sprinkle wheat flour.

In this way, fold the other side to form a rectangle and sprinkle wheat flour. Once again, fold rectangle from right to left, brush with mixed oil and sprinkle wheat flour.

Fold left side to obtain a square. Do as shown for the rest of balls. Flatten squares with tip of fingers before cooking.
On moderate heat, cook m'smmen onto preheated and lightly greased pan. Brown both sides of m'smmens and serve hot with a
mixture of honey and melted butter.
