raisin and almond feqqas

Ingredients :

* 250 g (9 oz) of icing sugar * 3 whole eggs * 1/2 teaglassful of melted butter * 1/2 teaglassful of groundnut oil

* 250 g (9 oz) of almonds * 250 g (9 oz) of seedless raisins * 2 sachets (4 tsp) of baking powder * 2 sachets of vanilla sugar

* 750 g (1 lb 10 oz) (approx) of fine flour dependmg on how much * liquid it absorbs.

Preparation: 

Beat the eggs with the sugar until the mixture is white. Add the melted butter and oil and beat again. Skin the almonds after blanching in boiling water. Wipe with a clean cloth and put through a mincer twice . Mix with the beaten egg mixture, add the vanilla sugar, baking powder and the raisins (which should have been washed and dried).

Then gradually add the sieved flour until a pliable dough is made a little less stiff than bread dough Shape in sticks the size of a banana.Put on an oiled baking sheet and cook until almost done. Remove from the oven before they brown.

Leave to stand until the next day and cut into rings about 1/2cm (1/4) thick, taking care not to break them. Place on an ungreased baking sheet and cook in the oven until golden brown. When cold store in an airtight tin so that they remain crisp.
