Sellou recipe

Ingredients:

* 1 kg flour * 1 kg sesame seeds * 1 kg almonds * 500 gr icing sugar * 1 tablespoon ground aniseed * 1 and 1/2 tablespoon cinnamon
* 1/2 teaspoon gum arabie powder * 1 teaspoon salt * 750 gr butter

Preparation:

Roast flour while stirring continuously until it becomes golden then sift. Wash and drain sesame seeds, grill in pan then mix in food processor. Wash almonds and brown them a few minutes then mix.
 
In bowl, combine roasted flour, sugar, mixed almonds, aniseed, cinnamon, gum Arabic powder, mixed sesame seeds and salt Melt butter in a saucepan, leave it to cool 1 minute and pour it clarified progressively onto flour mixture. Mix with your hands until homogenous.
 
Decoration: 

*Arrange sellou in a plate and shape a pyramid, sprinkle icing sugar and decorate with fried almonds.
*If you wish, add honey to sellou and form balls. Place them into pastry boats and garnish with a fried half almond.
*Mix sellou with honey and form fat fingers. Roll them into sesame seeds and then cut into small slices of 1 cm thickness.
