Ingredients:

* 1 kg(2 ibs 3oz) of fine flour *  500 g (1 lb 2 oz) of toasted sesame seeds * 1 level soups poonful of crushed aniseed

*  2 soupspoonfuls of powdered cinnamon * 300 g (11 oz) of caster sugar * 250 g (9 oz) of skinned almonds fried in 1/4 litre (1/2 pt) of oil

* 100 g (4 oz) of butter * 300 g(11 oz) of honey * 3 to 4 grams of gum-acacia crushed with a lump of sugar

Preparation: 

Put the flour in a frying pan over a moderate heat and stir all the time until it turns golden brown. Then sieve. Wash the sesame seeds and brown in the same way as the flour. Skin the almonds and fry in oil. Mix the sesame seeds, almonds and caster sugar together and put through a mincer once.

Put the mixture in a gsaâ after adding the flour, cinnamon, aniseed and gum-acacia. Make a hollow in the mixture and pour in the butter and honey which have been heated in a saucepan until they are hot but not boiling and mixed with the oil in which the almonds have been fried. Stir well so that the flour absorbs this liquid.

When the mixture is smooth, arrange in a dome on a dish pressing it down well and sprinkle icing sugar with the sieve on top. Decorate with a few fried almonds.
