semolina ghoriba

For about 50 biscuits :

* 1 kg (2 ibs 3 oz) of fine semolina * 500 g (1 ib 2 oz) of caster sugar * 6 eggs

* 1/2 teaglassful of groundnut oil * 1/2 teaglassful of melted butter.

* 1 sachet (2 tsp) of baking powder * 1 sachet of vanilla flavoured sugar

Preparation: 

Beat the eggs with the sugar until the mixture becomes white then add the oil, butter, baking powder and vanilla flavoured sugar. Mix these ingredients with the semolina.

Smear the hands frequently with orange-flower water while shaping balls of dough the size of a large walnut. Flatten a little by pressing onto a little icing sugar on one side to give them the appearance of macaroons. Put on a buttered baking sheet progressively, fairly well spaced out, sugar side up. Cook in a moderate oven for 15 to 20 minutes.
