haloua dial jeljlane (sesame seeds in honey)

Ingredients :

* 1 kg (2 ibs 3 oz) of grilled sesame seeds * 1 level teaspoonful of powdered gum-acacia

* 1 1/2kg (3 ibs 5 oz) of honey * 500 g (1 ib 2 oz) of almonds

Separately wash, drain and toast the sesame seeds and then the almonds. Put the almonds in a tbecq and rub hard between the palms of the hands to get rid of the skins. Crush very coarsely in a mortar. Put the honey on to boil (if possible use Chebbakiya honey). Leave to cook until it makes threads when poured from a spoon then add the gum-acacia, sesame seeds and almonds. Leave another 2 or 3 minutes on the heat then remove. Oil the table and pour the mixture over it. Leave to cool and harden. Cut into little squares.

Ingredients :

* 2 glasses of grilled sesame seeds * 1 glass of caster sugar

* 1 teaglassful of skinned almonds, cut in 2 Iengthways, grilled or browned in the oven

* 1/2 teaspoonful of powdered gum-acacia

Wash, drain and toast the sesame seeds and then the almonds and slice them. Put on one side. Put the caster sugar in a saucepan over the heat without adding any water and leave to melt while stirring until it begins to colour; then add the gum-acacia, sesame seeds and almonds. Mix and pour out quickly on an oiled table. Once it is cold, flatten with a rolling pin immediately and cut in little lozenges.
