bechkito (a sort of crisp butter biscuit)
Ingredients :
* 3 whole eggs * 250 gr (9 oz) of icing sugar * the zest of 1 lemon * 3 level soupspoonfuls of corn starch
* 3/4 teaglassful of groundnut oil * 2 sachets (4 tsp) of baking powder
* 400 to 600 g (approx. I Ib) of fine flour according to the amound of liquid it absorbs
Preparation:
Beat the eggs and the icing sugar until the mixture is white. Add the oil, continue beating and add the baking powder, the corn starch and lemon zest.Add the sieved flour little by little until an easy-to-handle dough is produced.
Oil the table and take a piece of dough and roll it out until it is about 3 mm (1/10) thick. Cut out with a round pastry-cutter and arrange progressively on an oiled baking sheet. Brush all over with egg yolk and cook in a moderate oven for 10 to 15 minutes.
