brains in sauce

Ingredients for2 sets of calves’ brains :

Clean the brains and wash in salt and water. Take off the outer membrane and wash well in clean water. Cover the brains with water and allow to stand in a cool place for a few hours. Then rinse and drain.
Cut each brain in six. Put in a saucepan with:

* 1 heaped teaspoonful of paprika * 1 pinch of ground chill * 1 soupspoofl ful of chopped coriander * 2 crushed garlic cloves

* 4soupspoorifuls of groundnut oil * be careful when adding the salt as the brains have already been * salted * 3 soupspoonfuls of lemon juice

Preparation:

Cover with water and cook with the lid on for about 2 hours. When cooked add 3 soupspoonfuls of lemon juice. Leave to boil down until a thick sauce is produced and remove from the heat. Serve cold.
