calves tongue sauce
Par-boil the tongue in very hot, but not boiling, salt water for 15 minutes. Take out of the water and skin, wash in salt and water. Rinse several times and cut into big cubes. Put in a thick-bottomed saucepan with salt and the following:
Ingredients for 1 tongue :
* 100 g (4 oz) of butter
* 1/2 teaspoonful of ground chilli
* 1 chopped onion
* 2 teaspoonfuls of papnka
Cover with water and cook for 3 hours with the lid on. At the end of the cooking time, add.
* 3/4 soupspoons of vinegar
* according to taste
* 1/2 teaspoonful of cumin
* 1/2 teaspoonful of crushed
* oriander seeds.
Leave to boil down until the sauce becomes thick and then remove from the heat. Serve hot.
