dry-bone tomatoes
Ingredients for 6 to 8 people:
* 5kg (11 Ibs) of tomatoes * 2 chopped or skiced onions * 6 or 7 dried bones
* hot peppers (chillies) to taste * 1 soupspoon ful of sweet pepper (paprika) * 1 ladle of groundnut oil
Preparation:
Wash, skin and seed the tomatoes. Cut into pieces. (Never pass through a vegetable sieve). Put on to cook with the onions, paprika, chilli and oil. Add the bones after careful washing (change the water several times). Do not add salt. Leave to cook, stirring frequently to avoid anything sticking to the bottom of the saucepan, until there ts no more liquid and the tomatoes form a thick purée.
Add the chopped parsley, leave to cook again for a few minutes until the oil separates from the tomatoes. Check the seasoning and remove from the heat. Re-heat at the time of serving, taking care the tomatoes do not burn.
