hare m'hammer

Ingredients for a good-sized hare:

* 1 teaspoonful (heaped) of paprika * 1 level teaspoonful of cumin

* 2 crushed garlic cloves * salt

* 150 g (5 oz) of butter * 1 teaspoonful of flour * ground chilli (to taste)

Preparation: 

Wash the hare in salt and water after having cleaned it and cut it up. Leave to drain. Put in a thick-bottomed suacepan with salt, cumin, paprika, butter, crushed garlic and (according to taste) a little ground chilli. Cover with water. Cook with the lid on, turning the pieces over from time to time to that they are impregnated all over with the sauce. When the hare is cooked, i.e. the flesh comes off the bones easily in the fingers, take it out of the saucepan.

Add a teaspoonful of flour blended with a little water to the sauce, stirring quickly. Leave to boil down to a rich, thick consistency and remove from the heat. 20 minutes before the meal, heat 100 g (4 oz) of butter and half a adleful of oil in the frying pan and fry the pieces of hare until golden brown all over.Arrange on a hot dish . Re - heat the sauce , adding 1 soupspoonful of the frying fat stirring the saucepan with a firm circular movement and pour over the hare. Serve at once.
