mezgueldi (onions with khlii)

Ingredients for 8 people :

Cut 4 kg (9 Ibs) of onions into rings, boil and drain by pressing them. Put them into a saucepan with 250 g (9 oz) of khlii (dried meat, see recipe page 12 ) 3 soups poonful of khlii fat, a heaped teaspoonful of paprika and crushed chilli to taste. Add salt. Allow to boil down until there is nos liquid left and add half a teaglassful of lemon juice, and a bunch of chopped parsley. Leave a few more minutes and then remove from the heat and serve very hot.
