stuffing for kefta briouat

Ingredients for 80 briouats :

* 500 g  (1 ib 2 oz) of minced meat * 100 gr (4 oz) of beef fat

* 1 ouarka past layer * 15 x 20cm (6’ x 8”) for each envelope

* 6 eggs * 150 g (5 oz) of butter * 3 teasponfuls of cinnamon

Preparation: 

Prepare the mincel meat (see kefta in the chapter on grilled dishes) and put in a saucepan with 150 g (5 oz) of butter. Cook, stirring continuously with a spatula. When the meat is cooked and the meat juice completely evaporated,

pour the 6 beaten eggs gradually over it stirring all the time and the 3 teaspoonfuls of cinnamon. Go on stirring for 2 or 3 minutes and remove from the heat.Then fold the briouats as explained above and fry on both sides in boiling oil until golden brown. Serve at once with icing sugar and cinnamon.
