Zàalouk
Ingredients:
* 2 medíum eggplants
* salt, black pepper
* 4 garlic cloves
* 4 tomatoes
* 5 tablespoons olive oil
* 1/2 teaspoon paprika
* 1/2 teaspoon cumín
* 1 tablespoon parsley and coriander chopped
Preparation:
Peel eggplants, cut roughly, salt then poach with garlic over low heat. Drain and preserve. Hull, blanch and de-seed tomatoes. Cut into pieces and cook in pan with oil, cumin, paprika, salt and pepper. You may add can tomato to thicken sauce and bring out taste.

Once sauce reduced, add parsley, coriander, eggplant cubes and garlic.
Crash them when smooth with a wooden spatula until homogenous, Serve warm.
