chermoula or marinade for fish

Quantities for 3 kg (6 lbs 10 oz) of fish. Use more or less according to the amount of fish to be cooked.
Stalk, wash and crush a large bunch of coriander with salt either in a morta (mehraz) or in an electric mixer with 1/2 glassful of water, 3 or 4 crushed cloves of garlic and enough salt for the seasoning. Then add the following to the crushed coriander.
