haricot beans in sauce (K'dra)
Ingredients for 8 people :
* 500 g (1 ib 2 oz) of haricot beans soaked overnight
* 2 sliced onions and
* 1 chopped onion
* 1 good pinch of saffron (preferably crushed saffron flowers)
* 150 g (5 oz) of butter
* 1 teaspoonful of pepper
* 1 handful of chopped parsley
Preparation:
Put the haricot beans on to cook with the chopped onion, saffron, butter and pepper. Add salt and cover with water. When the haricot beans are almost cooked, add the 2 sliced onions and a small handful of chopped parsley. Remove from the heat when the onions are cooked but still in whole pieces. If the sauce is too thick add a little water. Serve hot.
