Spicy green beans
Ingredients:
* 750 g young green beans
* 1/4 cup vegetable oil
* 2 cloves garlic crushed
* 1 medium, red onion, finely chopped
* 6 red, ripe tomatoes, peeled and chopped
* 1 small red chilli, finely chopped
* 2/3 cup hot water
Preparation:
Wash beans, drain and dry on absorbent paper. top and tail. heat oil in large frying pan. Add garlic and onion and cook until golden and glossy in appearance.Add tomatoes and chilli and cook for 2 minutes more. Add whole green beans and stir-fry over high heat for 3 minutes. Add hot water and simmer 10 minutes, or until beans are just tender.Do not over cook. Serve hot.
HINT Red onions are also called Spanish onions. They are crisp and sweet and wonderful to use in salads.In some vegetable shops it is possible to buy very small, green beans packed in 250 g amounts.
