beetroot salad
Ingredients :
* 500 g (1 lb 2 oz) of beetroot * 1/2 teaspoonful of paprika * 1 pinch of cinnamon,
* 1 pinch of cumin * 1 heaped soupspoonful of caster sugar * 2 soupspoonfuls of orange-flower water
* 1 full glass of the beetroot stock * salt * 1/2 lemon juice
Preparation:
Peel the beetroots, rinse and cook covered in water. When cooked (in about 2 hours) take off the heat and keep the stock. Slice the beetroots finely, put in a salad bowl and salt lightly. Pour over a glassful of the stock together with the ingredients listed above. Mix well and leave to cool.
